Dynasty Cellars Vintner Dinner at Semiahmoo Resort Mar. 24

With two centuries of family winemaking experience, Dynasty Cellars and winemaker Peter Osvaldik will join guests at Semiahmoo Golf and Country Club’s Great Blue Heron Grill for the Dynasty Cellars Vintner Dinner on Friday, March 24, 2017. The reception will be at 5:30pm and dinner will be seated at 6pm, with a cost of $75 per person.

Peter Osvaldik will visit from the cellars nearby location in Bellingham to lead guests through the pairings of the vintner dinner. Originally from the Czech Republic, Osvaldik and his wife Olga escaped the communist regime in 1983 and moved to America. He initially found work as a general contractor, but with his family history of winemaking, he eventually became a home winemaker. In 2006, Dynasty Cellars released its first commercial vintage.

Dynasty Cellars procures fresh grapes from Les Collines vineyard in Walla Walla, Washington. Sitting amongst the Blue Mountains, Les Collines means foothills in French. The warm climate and clay soil contributes to the high-quality grapes Dynasty Cellars uses to produce its signature Bordeaux wines.

The pairing dinner’s first course begins with roasted Hokkaido scallops with cannellini bean, green apple and celery salad, finished with a yuzu and Spanish olive oil emulsion, paired with a 2016 Dynasty Cellars riesling.

The second course features pan-seared Black Angus beef tenderloin withcarrot puree, roasted white asparagus, yellow foot chanterelles and smoked mustard jus, paired with a 2012 Dynasty Cellars cabernet sauvignon.

The third course features fromage blanc Pana Cotta withraspberry sorbet, citrus and vanilla compote paired with 2013 Dynasty Cellars amabile late harvest zinfandel.
